What's cooking tonight

My dinner with Adam Eskin, owner of The Pump Energy Food, got rescheduled so I can play in the kitchen tonight. Last week I had a fantastic dinner at Fairway Cafe, yes it is upstair from the supermarket, whole roasted branzino with fennel, sea salt & olive oil. Is it possible to make something as good at home?
